  • 2 slices bacon, cooked
  • 2 eggs, scrambled
  • salt, to taste
  • pepper, to taste
  • green onion, for garnish

Preparation

  1. Cut sweet potato into thin slices, about ¼ inch (6 mm) thick.
  2. Place in toaster and set it to the maximum cook time. When it pops, flip the sweet potato slices over and toast 1 more time. Depending on the strength of your toaster and your preferences, you may need to toast it 1 more time after that.
  3. Remove from toaster and let cool enough to handle.
  4. Scramble eggs with salt and pepper.
  5. Place two slices of cooked bacon on the sweet potato toast. Top with scrambled eggs.
  6. Garnish with green onion.
