Ingredients

for 2 servings

  • 2 egg yolks
  • ¼ cup grated parmesan cheese (30 g)
  • 1 cup penne pasta (180 g), fusilli or spaghetti pasta
  • chicken, if desired, sliced
  • ½ cup pasta water (120 mL)

Preparation

  1. Cook pasta according to package directions. While cooking, place egg yolks in a large glass bowl and add grated parmesan.
  2. Once pasta is done, drain and set aside, setting aside ½ cup (120 ml) pasta water in a mug. Add water to the parmesan-egg mixture immediately and mix well. If using meat, add that as well.
  3. If the mixture is too thick, add more pasta water to thin out the sauce.
  4. Top pasta with sauce and serve warm.
