French Patty

  • 1 lb ground beef (455 g), 80% lean
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon oil
  • 3 hamburger buns


  • 3 oz comté cheese (85 g), sliced
  • 1 cup caramelized onion (150 g)
  • 1 cup fresh arugula (20 g)
  • mustard, of choice, to taste

  1. Mix together the patty ingredients until evenly combined.
  2. Form the beef into a round patty.
  3. Repeat with the remaining beef.
