Ingredients

for 6 servings

  • 1 tablespoon oil
  • 3 cloves garlic, minced
  • salt, to taste
  • pepper, to taste
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 potato, cubed
  • 1 ear corn, kernels removed
  • 6 cups vegetable broth (1 ½ L)
  • 2 cups water (480 mL)
  • 1 tablespoon dried thyme
  • 2 tablespoons paprika
  • 1 bay leaf
  • 1 cup milk (240 mL), milk alternative

Preparation

  1. Combine oil, garlic, and onion, salt, and pepper in a large pot over medium heat for 3 minutes.
  2. Add red pepper, potato, and corn. Stir for another 2 or 3 minutes.
  3. Add vegetable broth, water, thyme, paprika, and bay leaf. Stir.
  4. Bring to a boil, place the lid on the pot, and simmer for 10 minutes.
  5. Add milk or milk alternative, and stir. Remove bay leaf.
  6. Allow to cool a little before serving.
