Frozen Tropical Colada

Ingredients

for 2 servings

  • 2 cups
    pineapple juice, divided (480 mL)
  • 1 cup
    coconut milk (240 mL)
  • ¼ cup
    frozen mango, cut into chunks (40 g)
  • ⅓ cup
    lemon-lime soda, or 3 ounces (90 ml) rum (80 mL)
  • maraschino cherry, for garnish

Preparation

  1. Fill half of an ice cube tray with 1 cup (240 ml) of pineapple juice. Fill the other half with 1 cup (240 ml) of coconut milk. Freeze for at least 2 hours.
  2. Add the frozen pineapple juice cubes, frozen coconut milk cubes, mango, remaining pineapple juice, and lemon-lime soda to a blender and blend on high speed until smooth.
  3. Pour into glasses and garnish with maraschino cherries.
  4. Enjoy!
