Chicken Breast:

  • 2 Large boneless skinless chicken breasts, halved horizontally to make 4 fillets
  • 1 tablespoon italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt, more or less to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Ingredients (Bruschetta)

  • 2 roma tomatoes, finely diced
  • 2 tablespoons red onion, finely diced
  • 1 clove garlic, minced
  • 1 tablespoon fresh basil, finely chopped
  • ¼ teaspoon salt, more or less to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • parmesan cheese, fresh shaved, for garnish
  • balsamic reduction, for drizzle and garnish

  1. Season chicken with Italian seasoning, garlic powder, salt, and black pepper; set aside.
  2. Heat a skillet or grill pan over medium high heat, add oil and sear chicken breasts until browned on both sides and cooked through. Remove from the skillet, and allow it to rest.
  3. In a medium bowl, add tomatoes, red onion, garlic, basil, salt, pepper and olive oil; mix well. Top each chicken breast with generous spoonfuls of bruschetta, add feta or parmesan and a drizzle of balsamic glaze.
